Some of the best flours for making gluten-free muffins are…….
- Coconut flour
- Buckwheat flour – (buckwheat flour is gluten and wheat free despite its name)
- Cassava flour
- Tapioca starch
- Rice flour
- Almond flour
- Almond meal
- Tigernut flour
- Your standard pre-made gluten-free flour mix.
- If you can tolerate oats or gluten-free oats then you can use oat flour or grind up some oats to make some.
You will often need more than one flour when making gluten-free muffins. With many of these flours, a little usually goes a long way. I am aware at this strange time some supermarkets have run out of flour. I hope this will ease once the panic buying does!
The good news is that for once the gluten-free and “free-from” sections in the supermarket seem to have more selection than the standard baking aisle. I hope wherever you are you have some options available for you too…..
