- Milk of choice, I used unsweetened almond milk
- Chorizo sausage
- Capsicum or bell peppers
- Red onion
- Spinach leaves, I like to use baby spinach leaves
- Garlic
- Cheese, you can use goat's feta cheese, standard grated cheese, or dairy-free plant-based cheese.
- Fresh herbs, parsley works well, you could also use freshly torn basil.
Step-By-Step-Instructions
- Preheat your oven to 180C/345F. Prepare the vegetables and chorizo. Dice the onion, mince the garlic, dice the capsicum/peppers, and chorizo into small pieces.
- Bring a pan to a medium-low heat. Add the olive oil. Saute everything minus the spinach for 2-3 minutes, then add the spinach leaves, and cook for another 2 minutes until soft.
- In a medium-sized bowl whisk the eggs and milk together, and add salt, pepper, and mixed herbs.
- Spoon the vegetables and chorizo mix into a greased casserole or baking dish and spread out evenly. Pour over the whisked eggs.
- Bake for 15 minutes then sprinkle over goat's feta or cheese of choice. Bake for another 15-20 minutes.
- Remove the cooked chorizo egg bake from the oven. Sprinkle with fresh parsley. Serve hot.
