Ranch dressing is usually made with a combination of buttermilk and sour cream, sometimes mayonnaise. It has a combination of onion, garlic, black pepper, and fresh herbs such as thyme, parsley, and dill
Key Ingredients
Cashews - Raw unsalted cashews, give the rich creamy, dairy taste for the dressing.
Unsweetened almond milk - You can use any dairy-free milk of your choice, the unsweetened versions work the best.
Fresh herbs - These are a must for the delicious herby flavours. This ranch dressing uses a blend of parsley, dill and chives.
Djon mustard - Look for good quality mustard with no extra additives or sweeteners.
Garlic powder - You can use minced garlic if you prefer, but this will give the dressing a stronger garlicky flavour.
Onion powder -For added flavour. Fresh onion can be too strong so this gives a well-rounded flavour.
Fresh lemon juice
Step by Step Instructions
1. Get prepared - Soak the cashews in water in the fridge overnight or for at least 8 hours. Drain.
2. Rinse and dry the fresh herbs. Remove the leafiest portions from the stems of the dill and parsley. Discard the stems. Finely chop the herbs.
3. Add the drained cashews to the blender or food processor.
4. Next add almond or other dairy-free milk. Process on high until the ingredients are mostly smooth.
5. Add the spices - Add the mustard, garlic powder, onion powder, salt, and pepper to the blender. Blend until it is as smooth as you can get it.
6. Next add the lemon juice. Add 2 tbsp/30ml of lemon juice. Blend until incorporated. Taste and adjust salt and lemon juice to the desired level of tang.
7. Add the fresh herbs. Add the parsley, dill and chives. Pulse several times until evenly distributed through the dressing.
8. If you have time then place the dressing in a covered container and allow it to sit in the fridge for at least 1 hour before serving. This will bring out the flavours of the fresh herbs in the ranch dressing.
How to store:
This dairy-free ranch dressing can be stored in an airtight container in the fridge for up to 5 days. I like to store it in a glass jar.
Additional Recipe Notes
- The colour of this ranch dressing will be slightly greener than ranch made from dried herbs.
- If you would like the recipe to be sweeter then you can try adding some maple syrup or sugar, try only a very small amount and blend and taste such as ½ a teaspoon at a time.
