No baking required, these easy no-bake brownies will hit the spot for those chocolate cravings! Gluten-free, dairy-free, and Vegan friendly.
These fudgy brownies are dipped in smooth, silky dark chocolate to give them a crisp shell and I have sprinkled them with freeze-dried strawberries and a dash of sea salt.

What's so good about this recipe? These healthy no-bake brownies feel like a decadent treat yet are full of unrefined healthy ingredients compared to your traditional brownie.
Sweetened with dates and maple syrup these Vegan brownies contain no refined sugar.
- Nuts - I have used a blend of raw, unsalted pecans and walnuts.
- Dates - You will need to use soft pitted dates. The dates help give these brownies their fudgy texture. I have used dried dates you could use the more expensive Medjool dates if you prefer. When using dried dates you might need to soak them in warm water first which makes them easier to blitz.
- Raw cacao powder - This is my preferred option to use or you could use ⅓ cup raw cacao powder plus ⅓ cup cocoa powder.
- Coconut flour - This cannot be replaced with another flour in this recipe, this is essential to get the right texture for the brownies.
- Maple Syrup - Use a good quality maple syrup for the best results for your brownies.
- Dark Chocolate - I used organic chocolate with 85% cocoa powder, it is also dairy-free. This gives a better silkier result than using baking chocolate chips.
- Freeze-dried berries - These are optional but top the brownie bars off nicely. I used freeze-dried strawberries.
Step by Step Instructions:
- First, soak the dates in a bowl of warm water for 5 to 10 minutes until soft. Then drain and set aside.
- While they are soaking add walnuts, pecans, salt, and coconut flour to your food processor. Blitz until you have a crumbly texture.
- Next add the raw cacao powder, dates, vanilla extract and maple syrup. Blitz until the brownie mixture is combined well.
- Line a slice tray with baking/parchment paper. I used a tray that is 17cm wide by 27cm long. Press the brownie mixture firmly down into the tray. Freeze for 2 hours.
- Remove the set brownie from the freezer and cut into squares or bars with a sharp knife.
- Next, make the chocolate ganache to coat the brownies in a chocolate shell. Use the double boiler method - place the dark chocolate and coconut oil in a glass bowl over a saucepan with boiling water. Gently melt the chocolate and oil stirring until you have a smooth liquid. Set aside for a couple of minutes to thicken.
- Line a baking tray with paper. Dip each brownie bar into the melted chocolate and then place on the baking tray.
- Top each brownie with a sprinkle of finely chopped freeze dried strawberries or raspberries and a dash of sea salt if desired.
- Place the brownies in the fridge to set until the chocolate is firm. This should take around 30 minutes. Remove from the fridge and cut off any excess chocolate with a sharp knife so you have brownie squares or brownie bars. Sprinkle with a tiny bit of sea salt if desired.
Storage and freezing tips
To store: These no-bake brownies can be kept in the fridge for up to 5 days in an airtight container.
To freeze: These brownies can be frozen in a freezer-safe container for up to 1 month. If freezing them then leave them out for a few minutes to soften up before serving.

If you would like your brownie bars or squares to be evenly sized then measure with a ruler before cutting them. If there are any uneven edges (which I had) then slice them off and you can roll them into brownie bliss balls to keep as snack.
