Easy Thai Coconut Lime Chicken
Thai Coconut Lime Chicken is an easy dinner full of fragrant flavours. Easily adaptable to be mild or spicy to suit the whole family.
First prepare your ingredients.....
Slice each chicken breast in half.
Preheat your pan over a medium high heat. Add coconut oil to coat the pan.
Place the chicken in the pan, cook for 2-3 min each side until lightly browned. Remove and set aside.
Add oil to coat pan. Next add the onion, garlic and ginger. Cook for 2-3 min until translucent.
Place the chicken back in the pan and pour over the coconut cream.
Then add the fish sauce, lime juice and lime zest. Stir
Add Thai basil & coriander/cilantro. Scoop onions, garlic & ginger off bottom of pan.
Change to a low heat. Simmer for 10 min. Stir in coconut sugar. Turn chicken over and simmer for 10 min.
Garnish with fresh chili, herbs & lime wedges. Serve with rice, cauliflower rice or steamed vegetables.
