Kale, Basil and Walnut Pesto

A tasty and nutritious pesto, quick and easy to make, perfect as a snack, spread or to add to other meals.

Ingredients
  

  • 1 lemon
  • 1 ¼ cup kale roughly chopped, stems removed
  • ¾ cup fresh basil
  • ¼ cup extra virgin olive oil
  • 1 garlic clove
  • 1 teaspoon Himalayan sea salt
  • ½ cup of walnuts
  • Freshly ground black pepper to taste

Instructions
 

  • Juice the lemon.
  • Add all ingredients to food processor and pulse until fine.
  • Adjust seasoning if necessary with more salt and pepper.

Notes

Pesto can be frozen in ice cube trays and pop out individual serves and defrost as needed or store frozen pesto cubes in an airtight freezer bag in freezer.
