All you have to do is pop your sliced sweet potato into the toaster add your favourite toppings and you have a delicious gluten-free breakfast or lunch right there!
This has to be one of the easiest ways to replace some refined grains with a nutritious wholefood like sweet potato - nutritious, delicious, and filling.
You may have sweet potato toast all over the internet being popular with Paleo diet fans at the moment. And although I am often not keen to jump on such fad bandwagons, I just had to give it a go.
I had made similar sweet potato recipes in the past, i.e. finely sliced sweet potato, baked in the oven, drizzled in pesto with a topping on top.
But I had never thought to pop the sweet potato in the toaster. This takes it to a whole new level because it is soooo easy! Anything that you can pop in the toaster makes life easy right? So I was looking forward to giving this a try.

To make simply thinly slice your sweet potato, then pop it in the toaster and put your favourite toppings on top. You will have to put the sweet potato down in the toaster on high 2-3 times until it is cooked.
Cooking times may vary depending on your toaster settings and how thick you slice the sweet potato. What you are looking for is soft on the inside and a bit crunchy around the outside.
Sweet potatoes are high in vitamin A (in the form of beta-carotene), vitamins B5 & B6, vitamin C, and fibre (1). As vitamin A is a fat-soluble vitamin it always needs to be paired with some healthy fats so it can be absorbed.
To get my dose of healthy fats in the recipe I have used tahini, avocado, and an olive oil-rich pesto as toppings but coconut oil or butter can also be used.
To make Vegan Friendly: Remove egg and feta, use a dairy-free pesto such as my kale, basil and walnut pesto.
To make Paleo Friendly: Remove goat feta.
If you are looking for more simple suggestions then it goes really well with eggs done anyhow on top or a slather of your favourite nut butter. The options for toppings are endless, be creative folks!

Sweet Potato Toast with 3 Delicious Healthy Toppings
Ingredients
- 1 sweet potato large , washed
Topping 1
- 1 teaspoon Tahini spread on bottom of toast
- 3 rounds cucumber sliced
- ¼ avocado sliced
- 1 tablespoon Sango sprouts on top
- Salt and Pepper to taste
Topping 2
- 1 tablespoon Pesto spread on bottom of toast
- 1 tablespoon red onion Thinly sliced
- 1 tablespoon goats feta Cubed
- 1 tablespoon Cherry tomatoes chopped in half
- 1 tablespoon kalamata olives Chopped and pitted
- 1 tablespoon Fresh basil leaves roughly torn
- Salt and pepper to taste
Topping 3
- 1 tablespoon Pesto spread on the bottom of toast
- 1 egg Semi-hard, boiled and sliced
- ¼ avocado sliced
- Salt and pepper to taste
Instructions
- Slice the sweet potato into ¼ inch long vertical pieces.
- Turn your toaster up high and put the sweet potato pieces into the toaster. You may have to do 2-3 round until sweet potato is fully cooked.
- The sweet potato should be soft on the inside and slightly crispy on the outside.
- Top with your favourite toppings once done.
