    Sweet Potato Toast with 3 Delicious Healthy Toppings - You simply have to try sweet potato toast. You will love it.......Seriously..... So easy and tastes so delicious with a variety of healthy toppings, this is such a great nutritious alternative to toast. All you have to do is pop your sliced sweet potato into the toaster add your favourite toppings and you have a delicious gluten free breakfast or lunch right there!

    This is has to be one of the easiest ways to replace some refined grains with a nutritious wholefood like sweet potato - nutritious, delicious and filling. I promise you after trying this, you won't look back!

    You may have seen this all over the internet being the "paleo" rage at the moment. And although I am often not keen to jump on such fad bandwagons, this I just had to give a go. I had made similar sweet potato recipes in the past, i.e finely sliced sweet potato, baked in the oven, drizzled in pesto with a topping on top. But I had never thought to pop the sweet potato in the toaster. This takes it to a whole new level because it is soooo easy! Anything that you can pop in the toaster makes life easy right? So I was very excited to give this a go.

    I was right to be excited about making sweet potato toast because it is super easy and super quick. Thinly slice your sweet potato, then pop in the toaster and put your favourite toppings on top. You will have to put the sweet potato down in the toaster on high  2-3 times until it is cooked. No different than stubborn gluten free toast really....lets face it! Cooking times may vary depending on your toaster settings and how thick you slice the sweet potato. What you are looking for is soft on the inside and a bit crunchy around the outside.

    Sweet Potato Toast with 3 Delicious Healthy Toppings. So quick, easy and tasty. These is a nutritious alternative to toast perfect if you are on a gluten free or grain free diet and not only is affordable but fills you up nicely.

    Sweet potatoes are high in vitamin A (in the form of beta-carotene) which is excellent for the immune system, vitamin B5 & B6, vitamin C and fibre. As vitamin A is a fat soluble vitamin it always needs to be paired with some healthy fats so it can be absorbed. To get my dose of healthy fats in there I have used tahini, avocado and an olive oil rich pesto as toppings but coconut oil or butter can also be used.

    For the toppings I have used below these can be made to suit vegan diets by removing the egg and goats feta or to suit paleo diets by simply removing the goats feta. The options for toppings are endless, be creative folks!

    Ingredients

    • 1 large sweet potato, washed
    • Topping 1
    • Tahini spread on bottom of toast
    • Sliced cucumber
    • Sliced avocado
    • Sango sprouts on top
    • Salt and Pepper to taste
    • Topping 2
    • Pesto spread on bottom of toast
    • Thinly sliced red onion
    • Cubed goats feta
    • Cherry tomatoes, chopped in half
    • Chopped pitted kalamata olives
    • Fresh basil leaves, roughly torn
    • Salt and pepper to taste
    • Topping 3
    • Pesto spread on bottom of toast
    • Semi hard boiled egg, sliced
    • Sliced avocado
    • Salt and pepper to taste

    Instructions

    1. Slice the sweet potato into ¼ inch long vertical pieces.
    2. Turn your toaster up high and put the sweet potato pieces into the toaster. You may have to do 2-3 round until sweet potato is fully cooked.
    3. The sweet potato should be soft on the inside and slightly crispy on the outside.
    4. Top with your favourite toppings once done.

    Notes

    Remove goats feta to make paleo and whole 30 friendly.
